Corn and Parmesan Muffin Bites

These are a great way to get spinach into your kids!

Wet Ingredients

  • 2 heaped tablespoons of tinned corn kernels.
  • 1/2 cup buttermilk / milk/ yoghurt
  • 1/4 cup virgin olive oil
  • 1 egg

defrost the spinach portions in the microwave before adding to the blender.

Dry Ingredients

  • 1 cup SR flour
  • 2 heaped tablespoons of corn kernels (add to both wet and dry ingredients.)
  • 1/2 tsp baking powder
  • 1 tblsp caster sugar
  • 1/4 cup parmesan cheese
