Mini Apple and Cinnamon Muffins
Mini Apple and Cinnamon muffins are great for an afternoon tea party! Kids love them too, and it’s a great way of getting them to eat more fruit!
Dry Ingredients
- 1 cup SR flour
- 1/2 tsp baking powder
- 1/4 cup sugar
- 1/4 tsp cinnamon
- pinch salt
- 1 small green apple, peeled cored and finely diced
Wet Ingredients
- 1/2 cup milk
- 1 egg
- 3 tblsp virgin olive oil
Topping
- 1/2 small green apple, thinly sliced
- Cinnamon dusting sugar
Notes
- After placing the mix into the cup cake maker, top each muffin with half a slice of apple and dust with the dusting sugar.
- These need to cook for around 15 minutes, much longer than usual because of the fruit.
- I clean my cupcake maker between every batch of these. The mixture is very runny and sticks more than other mixes.
- These are my husbands favorite.. I find myself cooking them on a regular basis!
Mini Cherry and Almond Muffins

These are super moist and make a wonderful quick dessert. Try them with creme fraiche or yogurt cream! I reduce or omit the sugar if I’m going to serve them with the yogurt cream and I’m using tinned cherries as these add enough sweetness on their own.
Dry Ingredients
- 75g caster sugar
- 100g plain flour
- 1/2 tsp baking powder
- 50g ground almonds (almond meal)
- 125g chopped cherries (fresh or tinned, drained)
Wet Ingredients
- 1 egg
- 90g greek yogurt
- 60g oil
Method
Grease your cupcake maker and turn it on.
Mix the dry ingredients in a bowl.
Blend the wet ingredients together in a blender.
Fold the wet and dry ingredients together, until just mixed.
Make according to the instructions on your cupcake maker, around 7 – 10 minutes.
Mini White Chocolate and Macadamia Nut Muffins
Dry Ingredients
- 1 cup of SR flour
- 1/3 cup of caster sugar
- 1/2 tsp baking powder
- 1/2 cup white chocolate chips
Wet Ingredients
- 30g melted butter or oil
- 1/4 cup milk
- 1 egg
- 1/4 cup macadamias
Double Choc Chip Muffins
Dry Ingredients
- 1 cup SR flour
- 1/4 cup sugar
- 1/2 cup chocolate chips
- 1 tsp baking powder
- 1/8 cup cocoa powder
- pinch salt
Wet Ingredients
- 1/2 tsp vanilla essence
- 1 egg
- 1/2 cup milk
- 60g of butter, melted or oil
Corn and Parmesan Muffin Bites
These are a great way to get spinach into your kids!
Wet Ingredients
- 2 heaped tablespoons of tinned corn kernels.
- 1/2 cup buttermilk / milk/ yoghurt
- 1/4 cup virgin olive oil
- 1 egg
defrost the spinach portions in the microwave before adding to the blender.
Dry Ingredients
- 1 cup SR flour
- 2 heaped tablespoons of corn kernels (add to both wet and dry ingredients.)
- 1/2 tsp baking powder
- 1 tblsp caster sugar
- 1/4 cup parmesan cheese
Hummingbird Cakes
No hummingbirds were killed in the preparation of this cake.
Killer good taste though.
Wet Ingredients
- 1 banana
- 110g crushed pineapple (undrained)
- small handful of walnuts
- 1/4 cup vegetable oil
- 1 egg
- 1 tsp vanilla
Dry Ingredients
- 150g SR flour
- 1/2 tsp bicarb soda
- 1/2 tsp mixed spice
- 90g brown sugar
(Mix well before adding wet ingredients.)
Icing
- 80g cream cheese
- 30g margarine spread (I use olive oil spread)
- 1 tsp vanilla
- 200g icing sugar
Decorate
Decorate with coconut and/or more walnuts
Spinach and Parmesan Muffin Bites

- 1/2 cup buttermilk / milk/ yoghurt
- 1/4 cup virgin olive oil
- 1 egg
